

BLACK BEAN/CORN SALSA
INGREDIENTS:
1 Can Black Beans. Drained
1 Can Shoe Peg Corn, Drained
1 Container of grape tomatoes diced or 2 Tomatoes
1/2 Bunch Cilantro
1 Avocado, diced
Garlic Powder, Sprinkled lightly
Balsamic Vinegar
Lime Juice 1/2 Lime
DIRECTIONS:
1. Mix all ingredients in a large bowl.
2. Squirt Lime juice over ingredients and mix.
3. Add Balsamic Vinegar slowly.
4. Mix until salsa is wet, but not too wet.
Comment: If making for the next day, add Balsamic Vinegar the next day to keep the salsa fresh.
