

Gazpacho
Ingredients:
6 ripe tomatoes, peeled and chopped
1 sweet onion, chopped
1 cucumber, peeled, chopped and seeds removed
1/2 cup chopped cilantro
1 clove garlic, chopped
1/4 cup red wine vinegar
1/4 cup olive oil
4 cups tomatoes juice or 2 cans crushed tomatoes
Juice from 1 or 2 limes
Instructions:
1. Combine all ingredients and blend to desired consistency
2. Place in a non-metal storage container and refrigerate overnight
